Instructions
Cut avocados in half, remove pits, scoop flesh into a bowl, and mash until smooth.
Melt chocolate gently using a double boiler or microwave, stirring until smooth. Add coconut oil if using.
Temper a spoonful of chocolate into the mashed avocado, then fold in the rest. Mix in maple syrup, vanilla, and salt.
Refrigerate the mixture for at least 30 minutes. Scoop out about 1 tablespoon, roll into balls, and chill.
Optional: Roll truffles in cocoa powder or dip in melted chocolate, then add toppings. Chill until set.
Bring to room temperature before serving, about 10 minutes out of the fridge.
Notes
For a glossy finish, dip truffles in tempered chocolate and sprinkle toppings while still soft.
