Indulge in these rich, creamy vegan truffles made with ripe avocados and dark chocolate, perfect for a decadent treat.

Ingredients

Flesh

  • 240 g ripe avocados (about 2 medium)

Chocolate

  • 225 g dark chocolate chips or chopped dark chocolate 70% cocoa

Cocoa powder

  • 25 g pure cocoa powder (for dusting and optional mix-in)

Sweetener

  • 3 tbsp maple syrup or honey (adjust to taste, vegan use maple syrup)

Vanilla extract

  • 1 tsp vanilla extract (optional but recommended)

Sea salt

  • Pinch sea salt (enhances flavor)

Coconut oil

  • 1 tsp coconut oil (optional, helps set and sheen)

Optional toppings

  • flaky salt, chopped nuts, shredded coconut

Instructions 

  • Cut avocados in half, remove pits, scoop flesh into a bowl, and mash until smooth.
  • Melt chocolate gently using a double boiler or microwave, stirring until smooth. Add coconut oil if using.
  • Temper a spoonful of chocolate into the mashed avocado, then fold in the rest. Mix in maple syrup, vanilla, and salt.
  • Refrigerate the mixture for at least 30 minutes. Scoop out about 1 tablespoon, roll into balls, and chill.
  • Optional: Roll truffles in cocoa powder or dip in melted chocolate, then add toppings. Chill until set.
  • Bring to room temperature before serving, about 10 minutes out of the fridge.

Notes

For a glossy finish, dip truffles in tempered chocolate and sprinkle toppings while still soft.
