Ingredients

Carrots

  • 2 cups finely shredded carrots (about 4 medium carrots)
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 0.75 cup brown sugar (packed)
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 0.75 cup vegetable oil
  • 1 tsp vanilla extract

Optional Mix-ins

  • 0.5 cup chopped walnuts or pecans
  • 0.5 cup raisins
  • 0.5 cup shredded coconut

Frosting

  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Optional 1-2 tsp milk (for desired consistency)

Instructions 

  • Preheat oven to 350°F (175°C). Grease or line a 9×13-inch pan.
  • Mix eggs, oil, sugars, and vanilla. Sift dry ingredients and fold into wet mixture. Add optional nuts, raisins, or coconut.
  • Pour batter into pan, bake for 35–40 minutes. Cool completely before frosting.
  • Beat cream cheese and butter, add powdered sugar and vanilla. Adjust with milk if needed. Spread over cooled bars and slice.

Notes

Ensure not to overmix the batter for a tender crumb.
