Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp salt

Wet Ingredients

  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 ½ cups shredded carrots

Optional Nuts

  • 1 cup chopped walnuts or pecans ((optional))

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Mix dry ingredients in a bowl. In another, whisk oil and eggs until fluffy, then combine with dry mixture.
  • Fold in shredded carrots and nuts, pour into dish, and bake for 25-30 minutes.
  • Let bars cool, then beat cream cheese, powdered sugar, and vanilla until smooth. Frost bars and cut into squares.

Notes

For extra flavor, add a pinch of nutmeg or allspice to the batter.
