Instructions
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
Mix dry ingredients in a bowl. In another, whisk oil and eggs until fluffy, then combine with dry mixture.
Fold in shredded carrots and nuts, pour into dish, and bake for 25-30 minutes.
Let bars cool, then beat cream cheese, powdered sugar, and vanilla until smooth. Frost bars and cut into squares.
Notes
For extra flavor, add a pinch of nutmeg or allspice to the batter.
