Ingredients

Crust

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Raspberry Swirl

  • 1 cup fresh raspberries
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp water

Chocolate Ganache

  • ¾ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Toppings

  • Fresh raspberries
  • Mini chocolate chips or chocolate curls

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
  • Mix crust ingredients, press into pan, and bake for 12–15 minutes. Cool slightly.
  • Prepare cheesecake filling by beating cream cheese, sugar, eggs, vanilla, and sour cream until smooth.
  • Cook raspberries with sugar, then add cornstarch-water mixture and simmer until thick. Cool.
  • Pour cheesecake over crust, spoon raspberry swirl on top, swirl lightly, then bake for 35–40 minutes. Cool and refrigerate for at least 3 hours.
  • Heat cream, pour over chocolate chips, stir until smooth, then spread ganache over chilled cheesecake. Garnish with raspberries and chocolate curls.

Notes

For best results, chill the cheesecake for at least 3 hours before serving.
