Ingredients

Main

  • 4 fillets Cod (Fresh, bright white fillets are ideal.)
  • 0.5 cup Basil Pesto (Substitute with sun-dried tomato pesto if desired.)
  • 0.5 cup Parmesan Cheese (Freshly grated is preferred.)
  • 2 tablespoons Olive Oil (Use high-quality extra virgin.)
  • 2 cloves Garlic (Minced or roasted for mellower taste.)
  • 1 tablespoon Lemon Juice (Fresh juice is best.)
  • to taste Salt Salt
  • to taste Pepper Pepper
  • a few Fresh Basil Leaves Fresh Basil Leaves (For garnish.)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Place cod fillets on a baking sheet and brush with olive oil.
  • Spread basil pesto over each fillet and sprinkle with Parmesan cheese.
  • Bake for 12-15 minutes until fish is cooked through and topping is golden.
  • Drizzle with lemon juice, season with salt and pepper, and garnish with basil leaves before serving.

Notes

For extra flavor, add a squeeze of lemon just before serving.
