Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • A pinch black pepper (to taste)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Wet ingredients

  • 4 tablespoons unsalted butter, melted
  • 1 cup whole milk, at room temperature
  • 2 eggs eggs, at room temperature

Add-ins

  • 1/2 cup tomatoes, chopped
  • 1 cup grated semi-hard cheese (Gouda, Fontina, or cheddar)
  • 2 tablespoons fresh parsley or basil, chopped
  • Optional Fresh herbs (parsley, chives, thyme, basil) (for extra flavor)
  • Optional Paprika or cayenne pepper (for a spicy kick)

Instructions 

  • Mix dry ingredients: flour, baking powder, salt, black pepper, garlic powder, and onion powder.
  • Whisk together melted butter, milk, and eggs until combined.
  • Combine wet and dry ingredients gently; do not overmix.
  • Fold in chopped tomatoes, cheese, and herbs.
  • Fill muffin tins three-quarters full; bake at 375°F (190°C) for 18-22 minutes until golden and a toothpick comes out clean.
  • Cool for 5 minutes before serving or transfer to a wire rack.

Notes

For extra flavor, sprinkle herbs or spices on top before baking.
