Instructions
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Remove excess fat.
Add diced onion, bell pepper, and garlic; cook until softened, about 3-5 minutes.
Stir in Cajun seasoning, thyme, paprika, salt, and pepper; cook for 1 minute.
Add rice and stir to coat with seasonings. Pour in chicken broth, bring to boil, then reduce heat, cover, and simmer for 20-25 minutes.
Let sit for 5 minutes, then fluff with a fork. Garnish with chopped green onions and serve hot.
Notes
For extra flavor, add a dash of hot sauce or a squeeze of lemon before serving.
