A flavorful and hearty dish combining seasoned ground beef with rice and vegetables, perfect for a quick weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely diced
  • 1 green or red bell pepper, diced bell pepper
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions, for garnish

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Remove excess fat.
  • Add diced onion, bell pepper, and garlic; cook until softened, about 3-5 minutes.
  • Stir in Cajun seasoning, thyme, paprika, salt, and pepper; cook for 1 minute.
  • Add rice and stir to coat with seasonings. Pour in chicken broth, bring to boil, then reduce heat, cover, and simmer for 20-25 minutes.
  • Let sit for 5 minutes, then fluff with a fork. Garnish with chopped green onions and serve hot.

Notes

For extra flavor, add a dash of hot sauce or a squeeze of lemon before serving.
