Ingredients

Wet ingredients

  • 2 large bananas, very ripe (about 1 cup mashed)
  • 0.5 cup plain Greek yogurt or sour cream
  • 1 teaspoon baking soda
  • 0.25 teaspoon fine salt
  • 0.25 cup grapeseed or vegetable oil
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry ingredients

  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup mini chocolate chips (semisweet)

Instructions 

  • Line a muffin pan with cupcake liners and preheat oven to 350°F (175°C).
  • In a large bowl, mash bananas until chunky applesauce consistency. Add yogurt and baking soda, stir to activate.
  • Add salt, oil, sugar, egg, and vanilla to wet ingredients. Whisk until just combined.
  • In a separate bowl, sift together flour, cocoa powder, and chocolate chips. Fold dry ingredients into wet until just combined.
  • Spoon batter into muffin cups, filling 3/4 full. Bake for 18-20 minutes until a toothpick comes out clean. Cool before serving.

Store muffins at room temperature for up to 3 days or refrigerate for up to 1 week for best freshness.
