10largemedjool dates(pitted)
0.5cupraisins
1cupoats
1cupwalnuts
0.5cupdesiccated coconut
0.5cupgrated carrot(from 1 medium carrot)
1unitorange zest(of 1 orange)
2tablespoonsorange juice
1.5teaspoonsground cinnamon
1teaspoonground ginger
0.25teaspoonsea salt
optional toppings
to tastedairy-free white chocolate, melted(for drizzling)
handfulchopped walnuts(for scattering on top)
Instructions
Preheat oven to 180°C (350°F).
Combine all base ingredients in a food processor until gooey. Add more orange juice if dry.
Press mixture into an 8-inch square baking tin and bake for 20 minutes. Cool and slice into bars.
Optional: drizzle with melted white chocolate and scatter chopped walnuts on top.
