Ingredients

  • 4 fillets salmon fillets (approximately 6 oz. each)
  • 3 tablespoons olive oil
  • 1 piece lemon (juice of 1 lemon)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1 cup cherry tomatoes
  • to taste Salt and pepper Salt and pepper (for seasoning)
  • for garnishing Lemon slices, feta cheese and Kalamata olives (optional)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Place salmon fillets on a baking sheet and brush with olive oil.
  • Mix lemon juice, minced garlic, dill, oregano, salt, and pepper; pour over the fillets.
  • Scatter cherry tomatoes around the salmon and bake for 15-20 minutes until cooked through.
  • Garnish with lemon slices, feta cheese, and Kalamata olives before serving.

Notes

For extra flavor, marinate the salmon with the lemon-garlic mixture for 30 minutes before baking.
