Ingredients

Dairy

  • 2 tablespoons butter
  • 1 large yellow onion (diced)
  • 3 stalks celery (sliced)
  • 0.5 cup matchstick carrots
  • 2 cloves garlic (minced)

Main

  • 3 cups cooked and shredded chicken (use a rotisserie chicken for ease)
  • 8 oz evaporated milk (or half and half)
  • 10.5 oz cream of chicken soup
  • 40 oz chicken broth
  • salt and freshly cracked black pepper to taste seasoning
  • 16.3 oz buttermilk biscuits (if you like a lot of biscuits, add an extra 5 oz can)
  • 0.25 cup all-purpose flour

Instructions 

  • Melt butter in a large pot, cook vegetables until tender, about 6-8 minutes.
  • Add chicken, broth, evaporated milk, and cream of chicken; simmer and season with salt and pepper.
  • Cut biscuits into quarters, toss in flour, then add to the soup and cook for 8-10 minutes.
  • Break apart and press dumplings under broth as they cook; ensure they are cooked through before serving.

Notes

For extra flavor, add herbs like thyme or parsley.
