Instructions
Preheat a skillet with 1 tablespoon of oil over medium heat. Add chicken with taco seasoning and cook for 4 minutes, stirring occasionally.
Add diced bell pepper and onion; cook for 5 minutes until chicken is cooked and vegetables are caramelized. Remove from heat.
Melt butter in a clean skillet over medium heat. Place a tortilla, sprinkle cheese, add chicken and vegetables, then top with more cheese and fold.
Cook until golden brown on one side, flip, and cook until cheese melts and tortilla is golden. Repeat with remaining tortillas.
Serve warm for best flavor and texture.
Notes
For extra flavor, add a squeeze of lime or fresh cilantro before serving.
