A flavorful and hearty soup perfect for a quick weeknight dinner, packed with chicken, beans, and vegetables.

Ingredients

Oil

  • 1 tablespoon Olive Oil

Vegetables

  • 1/2 large Onion (diced)
  • 2 cloves Garlic (minced)

Spices

  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Canned Goods

  • 1 15-ounce can Fire Roasted Tomatoes (keep juice)
  • 1 15-ounce can Black Beans (drained and rinsed)
  • 1 cup Corn (fresh or frozen)
  • 4 cups Chicken Broth (or more as needed to adjust consistency)
  • 4 cups Shredded Chicken

Toppings

  • fresh cilantro, lime, jalapenos, cheese, Cotija cheese, or crispy tortilla strips

Instructions 

  • Heat olive oil in a soup pot over medium-high heat.
  • Add diced onion and minced garlic; sauté until tender.
  • Stir in chili powder, cumin, salt, and pepper; cook a few minutes until toasted.
  • Add tomatoes with juice, black beans, corn, and chicken broth; bring to a boil, then simmer 10-15 minutes.
  • Stir in shredded chicken; heat through and serve with toppings.

Notes

For extra flavor, garnish with fresh cilantro and a squeeze of lime.
