Instructions
Heat olive oil in a soup pot over medium-high heat.
Add diced onion and minced garlic; sauté until tender.
Stir in chili powder, cumin, salt, and pepper; cook a few minutes until toasted.
Add tomatoes with juice, black beans, corn, and chicken broth; bring to a boil, then simmer 10-15 minutes.
Stir in shredded chicken; heat through and serve with toppings.
