Enjoy a vegan-friendly, deliciously chewy cookie inspired by Levain Bakery, made simple and quick at home.

Instructions
Preheat oven to 350F (175C).
Mix coconut sugar, almond butter, apple sauce, and vanilla until smooth.
Stir in oat flour, almond flour, baking soda, and salt until a sticky dough forms.
Fold in chocolate chips generously.
Shape into tall cookies on a lined tray and bake for 15-20 minutes.
Notes
For extra chewy cookies, slightly underbake and let cool.
