Instructions
Heat olive oil in a large pot, sauté onion until translucent (~5-7 min).
Add garlic and cook for 1 minute, stirring frequently.
Pour in crushed tomatoes and broth, season with sugar, salt, pepper, and red pepper flakes. Simmer for 20 minutes.
Puree the soup until smooth, then stir in heavy cream and basil. Warm for 5 minutes.
Adjust seasoning if needed, then serve hot topped with croutons, basil, and Parmesan.
Notes
For a richer flavor, use fresh tomatoes and basil when in season.
