Ingredients

olive oil

  • 2 tablespoons olive oil

onion

  • 1 medium onion, finely chopped

garlic

  • 3 cloves garlic, minced

crushed tomatoes

  • 2 cans (28 ounces each) crushed tomatoes or whole peeled tomatoes, blended

broth

  • 2 cups vegetable or chicken broth

sugar

  • 1 teaspoon sugar (optional, to balance acidity)

salt

  • 1/2 teaspoon salt (adjust to taste)

black pepper

  • 1/4 teaspoon freshly ground black pepper

red pepper flakes

  • 1/4 teaspoon crushed red pepper flakes (optional for mild heat)

heavy cream

  • 1/2 cup heavy cream or half-and-half

basil leaves

  • 1/4 cup fresh basil leaves, chopped (plus extra for garnish)

Parmesan cheese

  • Grated Parmesan cheese (optional, for garnish)

Instructions 

  • Heat olive oil in a large pot, sauté onion until translucent (~5-7 min).
  • Add garlic and cook for 1 minute, stirring frequently.
  • Pour in crushed tomatoes and broth, season with sugar, salt, pepper, and red pepper flakes. Simmer for 20 minutes.
  • Puree the soup until smooth, then stir in heavy cream and basil. Warm for 5 minutes.
  • Adjust seasoning if needed, then serve hot topped with croutons, basil, and Parmesan.

Notes

For a richer flavor, use fresh tomatoes and basil when in season.
