A hearty and comforting beef stew cooked to perfection in a Dutch oven, perfect for cozy dinners.

Ingredients

Dried ingredients

  • 3 tablespoons flour
  • 2 teaspoons salt
  • ½ teaspoon ground black pepper
  • 2 pounds stewing beef (cut into 1 inch chunks)
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 can (5.5 oz.) tomato paste
  • a few sprigs of fresh thyme or ½ teaspoon dried thyme thyme
  • 2 medium onions (cut into wedges)
  • 3 cloves garlic (minced)
  • 1 ½ pounds baby potatoes (halved)
  • 6 medium carrots (chopped)
  • 2 cups mushrooms (cut into large pieces)

Instructions 

  • Coat beef with flour, salt, and pepper.
  • Brown beef in olive oil, then add broth and cook for 2 minutes.
  • Stir in tomato paste, bay leaves, thyme, onions, and garlic, then bake at 350°F for 2 hours.
  • Stir in potatoes, carrots, and mushrooms, then bake for another hour until tender.
  • Remove bay leaves and thyme, garnish with parsley before serving.

Notes

For extra flavor, let the stew rest for 10 minutes before serving.
