Instructions
Coat beef with flour, salt, and pepper.
Brown beef in olive oil, then add broth and cook for 2 minutes.
Stir in tomato paste, bay leaves, thyme, onions, and garlic, then bake at 350°F for 2 hours.
Stir in potatoes, carrots, and mushrooms, then bake for another hour until tender.
Remove bay leaves and thyme, garnish with parsley before serving.
Notes
For extra flavor, let the stew rest for 10 minutes before serving.
