Ingredients

Streusel Topping

  • 0.75 cup all purpose flour (for streusel)
  • 0.75 cup granulated sugar (for streusel)
  • 0.5 tsp cinnamon (for streusel)

Muffin Batter

  • 1.5 cup all-purpose flour (for batter)
  • 1 cup granulated sugar (for batter)
  • 0.5 tsp cinnamon (for batter)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 large eggs
  • 0.33 cup plain yogurt (or vanilla yogurt)
  • 0.33 cup vegetable oil (or olive/canola oil)

Peaches

  • 2 large peaches (cut into 1/2-inch pieces, about 2 cups divided)
  • 0.75 cup peach chunks for topping (reserve about 3/4 cup)

Instructions 

  • Combine flour, sugar, and cinnamon for the streusel; add cold butter and rub until crumbly. Set aside.
  • Preheat oven to 375°F and line a 12-cup muffin pan with liners.
  • Mix dry ingredients, fold in peaches (reserve some for topping). Whisk eggs, yogurt, and oil; combine with dry ingredients.
  • Divide batter evenly into muffin cups, top with remaining peaches and streusel. Bake 18-20 minutes until golden and a toothpick comes out clean.
  • Cool muffins on a rack. Serve warm or at room temperature.

Notes

For best flavor, use ripe peaches and serve muffins warm for a delightful treat.
