Ingredients

Meat

  • 1 pound Lean ground turkey
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 cup Bell peppers, diced
  • 1 medium Zucchini, chopped
  • 1 cup Carrots, shredded
  • 2 cups Fresh spinach
  • 1 cup Shredded mozzarella cheese
  • 1 cup Tomato sauce
  • 2 tablespoons Olive oil (For sautéing)

Instructions 

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  • Add ground turkey and cook until browned; stir in Italian seasoning.
  • Mix in bell peppers, zucchini, carrots, and spinach; cook for a few minutes.
  • Transfer mixture to a baking dish, top with tomato sauce and mozzarella, then bake for 25-30 minutes.
