A quick and flavorful dish combining shrimp and fresh vegetables, perfect for a healthy weeknight dinner.
Ingredients

shrimp
Oil

olive oil

garlic

Seasonings

cajun seasoning
(divided)
Vegetables

zucchini
(sliced)

bell peppers

Instructions
Toss shrimp with 1 tablespoon oil, garlic, and ½ tablespoon cajun seasoning. Set aside.
Heat remaining oil and seasonings in a large pan, then add vegetables. Cook for 4-5 minutes.
Remove vegetables and set aside.
Add shrimp to the pan and cook until pink, about 5 minutes.
Return vegetables to the pan and cook until heated through, 3-4 minutes.
Notes
Feel free to add a squeeze of lemon for extra flavor.
