Ingredients

Eggs and Dairy

  • 12 large eggs
  • 0.25 cup whole milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper (freshly ground)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup red bell pepper (finely chopped)
  • 0.25 cup fresh spinach (finely chopped)

Instructions 

  • Preheat oven to 375°F and spray muffin tin.
  • Whisk eggs, milk, salt, and pepper until frothy.
  • Fold in cheese, bell pepper, and spinach.
  • Pour mixture into muffin cups, filling two-thirds full.
  • Bake for 15-20 minutes until set and golden.
  • Cool for 5 minutes, then remove and serve.
