Enjoy a nutritious and delicious egg wrap filled with fresh avocado, arugula, and feta cheese for a quick and satisfying meal.

Ingredients

Eggs and Dairy

  • 2 pieces eggs
  • 1 teaspoon water
  • 1 teaspoon all-purpose flour
  • Salt and pepper to taste Salt and pepper
  • 2 teaspoons olive oil
  • ½ avocado avocado
  • 1 teaspoon lemon juice
  • ¼ teaspoon garlic powder

Vegetables and Cheese

  • 1 cup arugula
  • 1 small tomato (sliced)
  • 1 tablespoon feta cheese

Instructions 

  • Whisk eggs, water, flour, salt, and pepper until well combined.
  • Heat olive oil in a pan, pour egg mixture, and cook until set, then flip and cook briefly.
  • Slide egg wrap onto a plate to cool slightly, then mash avocado with garlic, lemon juice, salt, and pepper.
  • Spread avocado mixture over the egg wrap, top with arugula, sliced tomato, and feta cheese, then roll and slice.
