Start your day with these quick and cheesy breakfast quesadillas, packed with eggs, cheese, and optional veggies for a satisfying meal.

Ingredients

Eggs and Dairy

  • 4 large eggs
  • 2 tablespoons milk or water
  • 1 cup shredded cheddar cheese

Vegetables and Herbs (Optional)

  • 2 tablespoons chopped onions (optional)
  • 2 tablespoons diced bell peppers (optional)
  • Fresh herbs like parsley or chives fresh herbs (optional)

Other

  • 4 medium flour tortillas (whole-wheat or regular)
  • 1 tablespoon olive oil or butter

Instructions 

  • Whisk eggs, milk, salt, and pepper in a bowl.
  • Cook eggs gently in a skillet until soft; set aside.
  • Heat skillet, add oil, then place a tortilla. Layer cheese, eggs, and optional veggies, then top with more cheese.
  • Fold tortilla, cook 1-2 minutes per side until golden and cheese melts.
  • Repeat with remaining tortillas, cut into wedges, and serve warm.

Notes

For extra flavor, add herbs or hot sauce.
