A flavorful and easy baked cod dish topped with Rotel and cheese, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 1 pound cod filets
  • 2 tablespoons avocado oil, olive oil or melted butter
  • 1/4 cup balsamic vinaigrette
  • 4 oz Rotel, drained
  • 1/2 cup shredded sharp cheddar cheese

Instructions 

  • Preheat oven to 425°F (220°C). Pat cod dry and place in a baking dish. Season with salt.
  • Pour balsamic vinaigrette over the cod, then top with drained Rotel and shredded cheese.
  • Bake for 10 minutes until the fish is cooked through.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
