Instructions
Combine soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil in a saucepan. Simmer and stir.
Mix cornstarch with water, then whisk into the sauce. Cook until thickened, then set aside.
Slice cucumber, toss with sesame seeds, rice vinegar, sugar, salt, soy sauce, and sesame oil. Marinate briefly.
Heat oil in a skillet, season cod, and sear for 3–4 minutes per side. Brush with glaze and cook until flaky.
Serve the cod with cucumber salad, garnished with scallions or cilantro if desired.
Notes
Ensure the fish is cooked just until flaky to keep it moist inside.
