Ingredients

Pasta

  • 12 ounces penne pasta
  • 1 pound chicken breast (diced)

Sauce

  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs

Seasoning

Instructions 

  • Cook the penne pasta according to package instructions.
  • Heat olive oil in a skillet, cook diced chicken until browned.
  • Add garlic and sun-dried tomatoes; cook briefly.

  • Season with salt and pepper, combine with cooked pasta, and serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.
