Ingredients

Coconut

  • 3 cups Unsweetened shredded coconut (Ensure the coconut is not too dry.)

Egg whites

  • 3 large Egg whites (Will hold the mixture together.)

Sweetener

  • 1/2 cup Honey (Acts as the sweetener.)

Flavoring

  • 2 tablespoons Lemon zest (Essential for flavor.)

Lemon juice

  • 2 tablespoons Lemon juice (Enhances the lemon flavor.)

Vanilla extract

  • 1 teaspoon Vanilla extract (Optional for additional flavor.)

Salt

  • 1 pinch Salt (Balances sweetness.)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix shredded coconut, egg whites, honey, lemon zest, lemon juice, vanilla, and salt until well combined.
  • Form mixture into small mounds on a baking sheet lined with parchment paper.
