1cupall-purpose flour

½teaspoonground cinnamon(optional but recommended)

Wet Ingredients
1cupmilk(whole or plant-based)
1largeegg
2tablespoonsmelted butter(plus extra for cooking)
1teaspoonvanilla extract
2tablespoonsgranulated sugar or honey(maple syrup for natural sweetness)
Fruit Mixture
1mediumapple(peeled and grated)
1ripebanana(mashed)
Instructions
Mash the banana and grate the apple, squeezing out excess juice. Mix them together.
Whisk milk, egg, melted butter, vanilla, and sugar in a large bowl. Add the fruit mixture and blend.
Sift dry ingredients and fold into wet mixture gently until just combined.
Heat a greased skillet over medium heat. Pour ¼ cup batter for each pancake. Cook 2-3 minutes until bubbles form, then flip and cook 1-2 minutes until golden.
Repeat with remaining batter. Serve warm with toppings of choice.
