A quick and flavorful dish combining tender chicken with a tangy honey lime sauce served over rice.

Ingredients

Protein

  • 4 pieces chicken breasts or thighs
  • 2 pieces fresh limes
  • 0.25 cup honey
  • 0.25 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Carbohydrate

  • 2 cups rice

Instructions 

  • Mix lime juice, honey, soy sauce, garlic, olive oil, salt, and pepper to make marinade. Marinate chicken for 30 minutes.
  • Sear chicken until golden, then remove from skillet.
  • In the same skillet, add lime juice, honey, and soy sauce; simmer until thickened. Return chicken to coat with sauce.
  • Cook rice according to package instructions.
  • Serve chicken over rice, drizzle with sauce.

Notes

For extra flavor, garnish with chopped cilantro or green onions.
