Ingredients

Meat

  • 1 pound ground beef

Grains

  • 1 cup uncooked long-grain white rice

Broth

  • 3 cups low-sodium beef broth

Vegetables

  • 1 small onion, diced
  • 4 cloves garlic, minced

Dairy & Cheese

  • 3 tablespoons unsalted butter, divided
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup whole milk

Seasonings

  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Black pepper

Herbs

  • 2 tablespoons chopped fresh parsley (optional)

Instructions 

  • Heat 1 tablespoon of butter in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  • Add ground beef and cook until browned; drain excess fat. Stir in garlic and cook for 1 minute.
  • Mix in rice, beef broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
  • Meanwhile, melt remaining butter in a small saucepan. Whisk in milk, cheddar, and Parmesan until smooth.
  • Pour cheese sauce into the beef and rice mixture, stir thoroughly, and cook uncovered for 2-3 minutes. Garnish with parsley if desired.

Notes

For a creamier texture, let the dish rest for a few minutes before serving.
