  • 4 pieces chicken thighs or breasts (swap as desired)
  • 1.5 pounds crispy potatoes (cut into chunks)
  • 4 cloves garlic (minced)
  • 3 tablespoons butter (for sauce and cooking)
  • 1 tablespoon olive oil (for cooking)
  • 1 lemon lemon (for squeezing)
  • 2 tablespoons parsley (chopped, for garnish)

Optional

  • 1 cup green beans (to stretch the meal)

Instructions 

  • Start by searing the chicken in a pan until golden, then set aside.
  • Add potatoes to the same pan and cook until crispy and tender.
  • Make the garlic butter sauce in the pan, then return chicken and potatoes, adding green beans if using.
  • Finish with a squeeze of lemon and sprinkle with parsley before serving.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce.
