2cupscooked rice preferably day-old
8ozsteak ribeye, sirloin, or flank, diced
2tbspbutter
1tbspolive oil
4clovesgarlic, minced
2eggsbeaten eggs
½cupfrozen peas and carrots
2tbspsoy sauce
1tbspoyster sauce
1tspsesame oil
2green onionschopped
to tasteSalt and pepper
Instructions
Heat 1 tbsp butter and olive oil in a large pan over medium-high heat. Add diced steak, season with salt and pepper, and sear for 2-3 minutes. Remove and set aside.
In the same pan, add garlic and cook until fragrant. Push to the side and pour in beaten eggs, scrambling them.
Add another tbsp of butter, then stir in rice, breaking up clumps. Stir in soy sauce, oyster sauce, and sesame oil. Mix well.
Add peas and carrots, cooking for 2 minutes. Return steak to the pan, stir, and cook for another minute. Garnish with chopped green onions and serve hot.
