Ingredients

Whole Chicken

  • 1 piece whole 4-5 pound chicken (room temperature with giblets and neck removed)
  • 0.25 cup unsalted butter (melted)
  • 4 tablespoons olive oil
  • 1 piece lemon (zested and juiced)
  • Salt and freshly ground pepper Salt and pepper (to taste)
  • 4 tablespoons butter (room temperature)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon fresh thyme (chopped)
  • 1 tablespoon paprika (optional, for darker color)
  • 6 cloves garlic (minced)
  • 1 head garlic (roughly peeled and cut in half horizontally)
  • 6 sprigs fresh rosemary (tied together)
  • 3 sprigs fresh thyme
  • 1 piece lemon (quartered)

Instructions 

  • Preheat oven to 425°F (220°C).
  • Rub the chicken with melted butter, olive oil, lemon zest, juice, garlic, herbs, salt, pepper, and paprika.
  • Stuff the cavity with lemon quarters and herb sprigs, then tie the legs and tuck wings.
  • Roast the chicken for about 1 hour 30 minutes, until golden and cooked through.
  • Let rest for 10 minutes before carving and serving.

Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
