A flavorful and juicy turkey breast roasted with garlic and fresh herbs, perfect for a special occasion or family dinner.

Ingredients

Main

  • 2.5-3 kg single turkey breast (skin on, bone in) (Note 1, NOT BRINED)
  • 1/2 tsp salt
  • Black pepper Black pepper
  • 4 sprigs rosemary (Small bunch of fresh herbs)
  • 8 sprigs sage
  • 10 sprigs thyme
  • 12 cloves garlic cloves (Smashed with side of knife)
  • 150 g unsalted butter (softened)
  • 1 1/4 tsp table salt or kosher salt
  • 1/2 tsp black pepper
  • 4 cloves large garlic cloves (Minced)
  • 1 tbsp finely chopped sage (Fresh)
  • 1 tbsp finely chopped rosemary (Fresh)
  • 1 tbsp fresh thyme leaves (Fresh)
  • 1 tbsp finely chopped parsley leaves (Fresh)

Instructions 

  • Remove turkey from fridge 45 minutes before cooking.
  • Preheat oven to 200°C (390°F). Place rack in lower middle position.
  • Place garlic and herbs in a baking dish. Mix butter ingredients together.
  • Loosen skin from the turkey, smear 2/3 of the butter under the skin, and smear remaining butter on the surface.
  • Turn turkey upside down, reserve 2 tbsp butter for the surface, and smear the rest on the underside. Roast until cooked through.

Notes

Ensure the turkey is fully cooked and rested before carving.
