Delicious and flavorful chicken skewers infused with garlic, Parmesan, and herbs, perfect for grilling or baking.

Ingredients

Meat

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 6-8 cloves garlic, minced
  • 0.5 cup freshly grated Parmesan cheese (plus extra for serving)
  • 0.25 cup extra virgin olive oil
  • 1 large lemon, zested and juiced
  • 0.25 cup fresh parsley, finely chopped (plus extra for garnish)
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 10-12 wooden or metal skewers skewers
  • 1 red bell pepper cut into 1-inch pieces (optional)
  • 1 yellow bell pepper cut into 1-inch pieces (optional)
  • 1 small red onion cut into 1-inch pieces (optional)
  • 1 cup cherry tomatoes (optional)

Instructions 

  • Soak wooden skewers for 30 minutes. Mince garlic, zest and juice lemon, grate Parmesan, chop parsley.
  • Combine garlic, lemon zest and juice, Parmesan, parsley, oregano, red pepper flakes, salt, pepper, and olive oil. Whisk well.
  • Pat chicken dry, cut into cubes, toss with marinade, and refrigerate 30 minutes to 12 hours.
  • Thread chicken and vegetables onto skewers, alternating as desired.
  • Grill at medium-high for 8-12 minutes, turning occasionally, until cooked through. Alternatively, bake at 400°F for 20-25 minutes or pan-fry for 3-4 minutes per side.
  • Garnish with extra parsley and Parmesan, squeeze lemon juice, and serve immediately.

Notes

Marinate chicken for at least 30 minutes for best flavor. Use fresh herbs when possible for optimal taste.
