Delicious and flavorful chicken skewers infused with garlic, Parmesan, and herbs, perfect for grilling or baking.
Ingredients
Meat
1.5lbsboneless, skinless chicken breasts or thighs, cut into 1-inch cubes
6-8clovesgarlic, minced
0.5cupfreshly grated Parmesan cheese(plus extra for serving)
0.25cupextra virgin olive oil
1largelemon, zested and juiced
0.25cupfresh parsley, finely chopped(plus extra for garnish)
1teaspoondried oregano
0.5teaspoonred pepper flakes (optional)
1teaspoonsea salt
0.5teaspoonfreshly ground black pepper
10-12wooden or metal skewersskewers
1red bell peppercut into 1-inch pieces (optional)
1yellow bell peppercut into 1-inch pieces (optional)
1small red onioncut into 1-inch pieces (optional)
1cupcherry tomatoes (optional)
Instructions
Soak wooden skewers for 30 minutes. Mince garlic, zest and juice lemon, grate Parmesan, chop parsley.
Combine garlic, lemon zest and juice, Parmesan, parsley, oregano, red pepper flakes, salt, pepper, and olive oil. Whisk well.
Pat chicken dry, cut into cubes, toss with marinade, and refrigerate 30 minutes to 12 hours.
Thread chicken and vegetables onto skewers, alternating as desired.
Grill at medium-high for 8-12 minutes, turning occasionally, until cooked through. Alternatively, bake at 400°F for 20-25 minutes or pan-fry for 3-4 minutes per side.
Garnish with extra parsley and Parmesan, squeeze lemon juice, and serve immediately.
Notes
Marinate chicken for at least 30 minutes for best flavor. Use fresh herbs when possible for optimal taste.
