Ingredients

Chicken

  • 1.5 lb chicken breasts or thighs, cubed
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1-2 tsp no salt added lemon pepper seasoning
  • 0.5 tsp salt
  • 0.25 cup lemon juice
  • 4-6 Tbsp butter
  • 3 cloves garlic, minced
  • 0.25 cup parmesan, grated
  • 2 tsp lemon juice (optional)
  • 3 Tbsp fresh parsley, chopped (or cilantro)
  • 1 small lemon, sliced for garnish (optional)

Instructions 

  • Marinate chicken with olive oil, paprika, garlic powder, onion powder, lemon pepper, salt, and lemon juice for 10 minutes.
  • Thread chicken onto skewers and grill over medium heat for 12-15 minutes until cooked through.
  • In a small saucepan, melt butter with minced garlic and lemon juice, then stir in Parmesan and parsley.
  • Brush the cooked skewers with the garlic Parmesan sauce and garnish with lemon slices and additional parsley if desired.

Notes

For extra flavor, marinate the chicken longer or add a pinch of red pepper flakes for heat.
