A moist and flavorful gluten-free pumpkin bread perfect for fall, combining warm spices and natural sweetness.

Ingredients

Wet ingredients

  • 1 cup pumpkin puree
  • 3 large eggs eggs
  • 2/3 cup white sugar
  • 2/3 cup light brown sugar
  • 1/2 cup melted butter or coconut oil
  • 2 teaspoons vanilla extract

Dry ingredients

  • 1 1/2 cups gluten free all purpose baking flour
  • 3 teaspoons cinnamon
  • 1 teaspoon ginger
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions 

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment.
  • Mix wet ingredients until smooth, then fold in dry ingredients.
  • Pour batter into pan, sprinkle with cinnamon or nuts if desired.
  • Bake for 55-65 minutes until a toothpick comes out clean.
  • Cool for 15 minutes in pan, then transfer to rack and cool completely.
