Ingredients

  • 1.5 lb cod (cut into 4 filet portions)
  • 1 large golden zucchini (sliced thin lengthwise)
  • 2 tsp extra virgin olive oil
  • 1 large yellow onion (diced)
  • 2 large cloves garlic (finely chopped)
  • 0.5 cup chopped cilantro
  • 1 tsp kosher salt (plus more to taste)
  • 0.25 tsp fresh cracked pepper (to taste)
  • 2 tsp Old Bay seafood seasoning
  • 2 tsp extra virgin olive oil (for rice and zucchini)

For the Garlic Cilantro Rice

  • 2 cups brown rice
  • 1 yellow onion diced
  • 2 large cloves garlic (finely chopped)
  • 0.5 cup chopped cilantro
  • 1 tsp kosher salt (plus more to taste)
  • 0.25 tsp fresh cracked pepper (to taste)

Instructions 

  • Cook the brown rice according to package directions.
  • Saute diced onions in 2 tsp olive oil until lightly browned, add garlic and cook until fragrant. Mix with cooked rice and cilantro.
  • Season cod with salt, pepper, and mayonnaise. Wrap each piece in zucchini slices, season with Old Bay, then bake at 400°F for 20 minutes until flaky.
  • While fish bakes, brown zucchini slices in hot oil until golden. Let cool slightly.
  • Wrap each cod fillet in zucchini slices, place on baking sheet, and bake. Serve over garlic cilantro rice.

Notes

Ensure zucchini slices are thin for easy wrapping and even cooking.
