For the Garlic Cilantro Rice

Instructions
Cook the brown rice according to package directions.
Saute diced onions in 2 tsp olive oil until lightly browned, add garlic and cook until fragrant. Mix with cooked rice and cilantro.
Season cod with salt, pepper, and mayonnaise. Wrap each piece in zucchini slices, season with Old Bay, then bake at 400°F for 20 minutes until flaky.
While fish bakes, brown zucchini slices in hot oil until golden. Let cool slightly.
Wrap each cod fillet in zucchini slices, place on baking sheet, and bake. Serve over garlic cilantro rice.
Notes
Ensure zucchini slices are thin for easy wrapping and even cooking.
