A rich and creamy beef stroganoff with tender rib-eye steak and savory mushroom sauce, served over buttered noodles.

Ingredients

Meat

  • 600 g rib-eye steak (trimmed and pounded ¾ cm thick)

Vegetables

  • 300 g cremini mushrooms (sliced ⅛-inch thick)
  • 1 medium onion (thin-sliced)

Dairy

  • 150 ml full-fat sour cream

Broth

  • 500 ml low-salt beef broth

Fats & Oils

  • 2 Tbsp butter
  • 2 Tbsp neutral oil (for searing)

Other

  • 1 Tbsp Dijon mustard
  • 1 Tbsp plain flour
  • Chopped chives chopped chives (for garnish)
  • Egg noodles or tagliatelle egg noodles or tagliatelle (for serving)
  • Kosher salt Kosher salt (to taste)
  • Freshly cracked black pepper black pepper (to taste)

Instructions 

  • Pound the steak, slice into strips, and season with salt and pepper.
  • Heat oil, sear beef in batches for 30 seconds per side, then set aside.
  • In the same pan, add butter and cook onions for 1 minute, then add mushrooms and cook until golden, about 4 minutes.
  • Sprinkle flour, cook 1 minute, then add broth and mustard, simmer 5 minutes.
  • Remove from heat, stir in sour cream, then return beef to warm through for 1 minute.
  • Serve over buttered noodles, garnished with chopped chives.

Notes

Use high-quality beef for best flavor and ensure not to overcook the beef to keep it tender.
