Instructions
Pound the steak, slice into strips, and season with salt and pepper.
Heat oil, sear beef in batches for 30 seconds per side, then set aside.
In the same pan, add butter and cook onions for 1 minute, then add mushrooms and cook until golden, about 4 minutes.
Sprinkle flour, cook 1 minute, then add broth and mustard, simmer 5 minutes.
Remove from heat, stir in sour cream, then return beef to warm through for 1 minute.
Serve over buttered noodles, garnished with chopped chives.
Notes
Use high-quality beef for best flavor and ensure not to overcook the beef to keep it tender.
