A vibrant, herbaceous dip combining creamy feta with fresh herbs and citrus for a perfect appetizer or spread.

Ingredients

Dairy

  • 8 ounces Feta Cheese (Use good quality feta packed in brine, drain before using.)
  • 0.25 cup Olive Oil (Extra virgin recommended.)
  • 1 cup Fresh Parsley (Packed, flat-leaf preferred.)
  • 0.5 cup Fresh Basil (Packed.)
  • 0.25 cup Fresh Mint (Packed.)
  • 2-3 pieces Green Onions (White and light green parts.)
  • 2 cloves Garlic Cloves (Adjust to taste.)
  • 2 tablespoons Lemon Juice (Freshly squeezed.)
  • 1 teaspoon Lemon Zest (Use a microplane or fine grater.)
  • to taste Salt (Start small, adjust after blending.)
  • to taste Black Pepper (Freshly ground.)

Instructions 

  • Drain and crumble the feta cheese.
  • In a food processor, blend feta and olive oil until smooth and creamy.
  • Add herbs, green onions, and garlic; pulse briefly to combine.
  • Mix in lemon juice and zest, then season with salt and pepper to taste. Blend until well combined.
  • Chill for at least 30 minutes before serving, or serve immediately garnished as desired.

Notes

For a thinner dip, add a drizzle of olive oil or a splash of water before serving.
