A flavorful and healthy salad featuring spicy grilled chicken topped with a creamy Cajun dressing, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 1 piece boneless, skinless chicken breast (halved horizontally to make 2 fillets (or thighs))
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1-2 teaspoons cayenne pepper (adjust to taste)
  • 4 cups romaine (cos) lettuce
  • 1 piece lebanese cucumber (quartered)
  • 1 piece tomato (chopped)
  • 1 piece avocado (sliced)
  • 1 teaspoon cajun seasoning
  • 2 tablespoons whole egg mayonnaise
  • 2 tablespoons non fat, plain greek yogurt (or sour cream)

Instructions 

  • Mix Cajun seasoning ingredients, reserving 1 teaspoon for the dressing.
  • Coat chicken with seasoning and grill until cooked and golden. Rest and slice into strips.
  • Assemble salad with lettuce, cucumber, tomato, and avocado. Top with sliced chicken.
  • Mix reserved Cajun seasoning with mayonnaise and yogurt to make dressing. Adjust seasonings as desired.

Notes

For extra flavor, marinate chicken in Cajun spices before grilling.
