Ingredients

Sauce

  • 1/2 cup sour cream
  • 3 pieces chipotle peppers in adobo sauce (finely chopped)

Rice and Beans

  • 1 cup cooked white rice
  • 1 cup cooked corn kernels (fresh, canned or frozen)
  • 1 cup canned black beans (rinsed and drained)
  • 1 tablespoon lime juice

Salmon

  • 4 6-ounce salmon fillets
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle chili powder
  • to taste salt and pepper salt and pepper
  • 1 tablespoon olive oil

Vegetables

  • 2 medium red onions (sliced)
  • 4 large flour tortillas
  • 2 avocados sliced avocados
  • 1 cup shredded Mexican cheese

Instructions 

  • Mix sour cream with chopped chipotle peppers to make the chipotle cream.
  • Prepare rice and bean mixture, season with salt and pepper.
  • Season salmon with cumin, chili powder, salt, pepper, and olive oil; grill until cooked through, then cut into pieces.
  • Grill onions until charred; warm tortillas on the grill.
  • Assemble burritos with rice, onions, salmon, avocado, cheese, and chipotle cream; fold and grill until crispy.

Notes

For extra flavor, marinate the salmon briefly before grilling.
