A vibrant and flavorful salad combining grilled chicken, fresh vegetables, and a tangy teriyaki dressing for a satisfying meal.

Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts
  • 0.5 cup teriyaki sauce
  • 0.5 cup pineapple juice (from the can of pineapple rings)

Vegetables

  • 8 cups chopped romaine lettuce
  • 2 pieces avocados
  • 0.5 cup cherry tomatoes
  • 1 can (15-ounce) pineapple rings
  • 0.33 cup rice vinegar or apple cider vinegar
  • 0.33 cup olive oil

Herbs & Garnishes

  • to taste Fresh cilantro
  • 0.5 cup pineapple juice (from the can of pineapple rings)

Instructions 

  • Marinate chicken with teriyaki sauce and half of the pineapple juice for 15 minutes.
  • Whisk together teriyaki sauce, rice vinegar, olive oil, and remaining pineapple juice to make the dressing. Chill until needed.
  • Preheat grill to medium. Grill chicken and pineapple until cooked and marked, about 6-10 minutes per side.
  • Slice grilled chicken. Assemble salad with lettuce, chicken, tomatoes, avocado, pineapple, and cilantro. Drizzle with dressing before serving.

Notes

For extra flavor, marinate the chicken longer or add a sprinkle of sesame seeds on top.
