Ingredients

Vegetables and Corn

  • 8 cups water (for boiling corn)
  • 2 ears corn on the cob (cut into 6 rounds each)
  • 1 large yellow onion (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 4 cloves garlic (minced)
  • 3 tablespoons butter (melted)
  • 1 tablespoon cajun seasoning blend (divided)
  • 1 teaspoon salt (divided)
  • 0.5 teaspoon black pepper (freshly ground, divided)
  • 4 filets tilapia (about 4-6 ounces each, thawed)
  • 1 tablespoon butter (cut into small cubes)

Lemon wedges

Instructions 

  • Preheat grill to 400°F. Prepare foil sheets and boil corn for 10 minutes, then drain.
  • Combine corn, onions, peppers, and garlic. Make Cajun butter with melted butter, seasoning, salt, and pepper, then toss with vegetables.
  • Season tilapia with remaining Cajun seasoning, salt, and pepper. Divide vegetable mixture and place on foil, add fish and butter cubes, then seal.
  • Grill packets for 15 minutes, flipping halfway. Carefully open packets and serve with lemon wedges.

Notes

Ensure fish is cooked through and serve immediately with lemon wedges for added flavor.
