A quick and flavorful skillet dish combining ground beef, zucchini, and colorful vegetables for a satisfying meal.

Ingredients

Vegetables and Seasonings

  • 2 teaspoons avocado oil
  • 1 medium sweet potato (peeled and cubed)
  • 1 small zucchini (diced)
  • 1 small red bell pepper (diced)
  • 1 small red onion (diced)
  • 2 teaspoons garlic cloves, minced
  • 1 pound lean ground beef
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) fire-roasted tomatoes (with juice)
  • 1 cup frozen corn
  • 3 tablespoons taco seasoning or homemade
  • 1 cup shredded Mexican-style or Monterey Jack cheese
  • Optional chopped fresh cilantro and sliced green onions (for topping)

Instructions 

  • Heat avocado oil in a large skillet over medium-high heat.
  • Add sweet potato and cook for 4–5 minutes, stirring occasionally.
  • Add zucchini, bell pepper, onion, and garlic; cook 3–4 minutes until slightly tender.
  • Push veggies aside, add ground beef; cook 7–9 minutes, breaking it up and draining grease.
  • Reduce heat, add beans, tomatoes, corn, and seasoning; stir to combine. Top with cheese, cover, and let melt for 2 minutes.

Notes

Feel free to garnish with cilantro and green onions for extra flavor.
