Ingredients

Meat

  • 1 pound lean ground beef 80/20 or leaner
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 0.5 cup tomato sauce or salsa
  • 0.5 cup water
  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • 1 each lime, juiced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon butter or olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, grilled or canned, drained
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 avocado diced or sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 0.5 cup sour cream
  • to taste hot sauce, for drizzling
  • 1 jalapeño sliced (optional)
  • for garnish fresh cilantro leaves
  • for serving lime wedges

Instructions 

  • Rinse the rice and cook in boiling water or broth with salt for 15-20 minutes until tender. Fluff, then stir in lime juice, cilantro, and butter. Keep warm.
  • In a skillet, heat olive oil, cook diced onion until softened, then add garlic and cook briefly. Add ground beef, cook until browned, then stir in taco seasoning, tomato sauce, and water. Simmer 5-7 minutes until thickened.
  • Assemble bowls by layering rice, seasoned beef, black beans, corn, lettuce, avocado, tomatoes, red onion, and cheese. Top with sour cream, hot sauce, cilantro, and jalapeño slices. Serve with lime wedges.

Notes

For extra flavor, add a squeeze of lime or hot sauce to taste.
