A hearty and flavorful baked pasta dish featuring ground turkey, vegetables, and melted cheese, perfect for a comforting family dinner.

Ingredients

Dried Pasta

  • 1 pound dried pasta

Olive Oil

  • 1 Tablespoon olive oil

Yellow Onion

  • 1 medium yellow onion (chopped)

Ground Turkey

  • 1 pound ground turkey

Italian Seasoning

  • 1 Tablespoon Italian seasoning

Dried Oregano

  • 1 teaspoon dried oregano

Red Pepper Flakes

  • pinch red pepper flakes

Garlic Cloves

  • 4 cloves garlic cloves (minced)

Sliced Mushrooms

  • 1 cup sliced mushrooms (any kind)

Crushed Tomatoes

  • 28 ounce can crushed tomatoes

Balsamic Vinegar

  • 2 Tablespoons balsamic vinegar

Baby Spinach

  • 2-3 cups baby spinach (roughly chopped)

Shredded Mozzarella Cheese

  • 1.5 cups shredded mozzarella cheese

Fresh Parsley or Basil

  • optional fresh parsley or basil (garnish)

Kosher Salt

  • to taste kosher salt

Black Pepper

  • to taste black pepper

Instructions 

  • Cook pasta in salted boiling water until 2 minutes less than al dente, then drain.
  • In an oven-safe skillet, cook onions and turkey with seasonings until browned, then add garlic and cook briefly.
  • Stir in mushrooms, tomatoes, vinegar, and spinach; simmer for 5-7 minutes.
  • Add cooked pasta, half the cheese, mix, top with remaining cheese, and bake at 375°F for 15-20 minutes until bubbly and cheese is melted.
  • Let sit for 5 minutes, garnish with herbs, and serve.

Notes

For a browned top, broil for 1-2 minutes, watching carefully to prevent burning.
