Instructions
Preheat oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out seeds.
Cook onions and garlic until soft. Add turkey, cook until browned. Stir in tomatoes, Italian seasoning, salt, and pepper; simmer 5 minutes.
Fill zucchini halves with turkey mixture and top with cheese. Bake for 20 minutes until bubbly.
Remove from oven, garnish with parsley, and serve.
Notes
For extra flavor, add a pinch of red pepper flakes or fresh basil.
