Ingredients

Vegetables

  • 1 piece onion (chopped)
  • 2 stalks leeks (chopped)
  • 2 stalks celery (chopped)
  • 1 piece carrot (diced)
  • 1 piece red pepper (diced)
  • 1 piece zucchini (diced)
  • 2 pieces potatoes (diced)
  • 2 cloves garlic (minced)
  • 1 piece chili pepper (minced, optional)
  • enough to cover Water
  • to taste Salt and pepper

Instructions 

  • Heat olive oil in a large pot and sauté the onion, leeks, and celery until softened.
  • Add the garlic, chili pepper (if using), and cook for 1 minute.
  • Add the diced carrots, red pepper, zucchini, and potatoes. Pour in water to cover the vegetables.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender. Season with salt and pepper.

Notes

This soup is perfect for a comforting, nutritious meal. Feel free to add herbs like parsley for extra flavor.
