A flavorful and creamy Cajun chicken pasta that's quick to prepare and perfect for a satisfying meal.
Ingredients
For the Cajun Spice Blend
1tspsmoked paprika
1tspgarlic powder
½tsponion powder
½tspdried oregano
½tspdried thyme
¼tspcayenne pepper
¼tspblack pepper
Salt to tasteSalt
For the Chicken
2largeboneless skinless chicken breasts, cut into strips
1tbspolive oil
Full Cajun spice blend aboveCajun spice blend
For the Pasta
12ozpenne or rigatoni pasta
1cupreserved pasta water
For the Sauce and Vegetables
1tbspolive oil
1red bell pepperred bell pepper, thinly sliced
1yellow bell pepperyellow bell pepper, thinly sliced
1mediumonion, thinly sliced
4garlic clovesminced garlic
2ozcream cheese or Neufchâtel
¾cupplain Greek yogurt, room temperature
½cupchicken broth
¼cupParmesan, grated
Juice of ½ lemonlemon juice
For Serving
to tasteFresh parsley, chopped
ExtraParmesan, shaved
Lemon wedgesLemon wedges

Instructions
Mix all Cajun spice ingredients.
Toss chicken with spice blend and sear 4–5 mins. Set aside.
Cook pasta until al dente, reserve 1 cup water, then drain.
Sauté peppers and onion 4–5 mins, add garlic, cook 30 sec. Melt cream cheese, add broth, yogurt, Parmesan, season, then add pasta water to adjust consistency.
Return chicken and pasta to skillet, toss to coat. Serve with parsley, Parmesan, and lemon wedges.
