Instructions
Pre-heat a nonstick pan on medium heat.
Cut salmon into 4 portions and sauté skin side down for 5 minutes.
Flip salmon, sauté for 2 more minutes, then cover and keep warm.
In the same pan, melt butter, add garlic, then whisk in milk and cornstarch slurry.
Add parmesan, salt, pepper, spinach, and tomatoes; return salmon to pan and heat through.
Notes
For extra flavor, consider adding herbs like basil or oregano.
